Friday Fill-In #2


1. On vacation, I like to relax and also try new foods and activities.

2. I am happy and peaceful in the ocean.

3. One of my favorite vacation spots is the Outer Banks.

4. Halloween is cool when there is a full moon.

5. Up, up and away is what I did yesterday morning when I tried parasailing!

6. Bananas ROCK.

7. And as for the weekend, tonight I'm looking forward to dinner at Awful Arthur's, souvenir shopping and more swimming in the pool, tomorrow my plans include the pool and our last dinner here at OBX and Sunday, I want to snuggle my kitty when we get home!

Today I did something I've wanted to do for YEARS - I went parasailing! It was even better than I'd imagined, and I felt great when it was over. Talk about an adrenaline rush! The girls did it with me, which made it even more special.

So this week's Thursday Thirteen is about things I still want to do. Some are more exciting than others, but they are still things I will feel good about accomplishing.

Thirteen Things I've Always Wanted to Do

1. Go-Karting (maybe tomorrow night)

3. Learn to crochet

5. Take a day trip to NYC with the kids

12. Have friends over for dinner/BBQ (social anxiety keeps me from doing that)

Photo Scavenger Hunt!

I thought a photo scavenger hunt would be a fun thing for the kids and me to do over the summer. We're doing it on Facebook, but I thought I'd post it here, too. From my Facebook Note:

I think I'm having more fun with it than the kids; I don't think they've really started. Doesn't matter, it's another way to be creative, something I'm craving right now. Feel free to join in!

Quick Post - Friday Fill-In

This is another "meme" that looks like fun. Though I'd give it a whirl. I'll probably write a longer post tonight.


1. I was up 30 minutes before 6:58 this morning. Crazy!

2. It was the reason, of course, that my meds are in sync and working great.

3. Guilt-tripping myself is something I no longer feel the need to do (but still do).

4. I have another errand to run, then lunch with my bestie today!

5. My writing inspiration...just go find it!

6. What were once vices are now in my past (except for an occasional beer, wine or margarita).

7. And as for the weekend, tonight I'm looking forward to a horror movie with the girls maybe, tomorrow my plans include having my parents over for a cookout and Sunday, I want to put my toes in the sand once we get to the Outer Banks!

Thursday Thirteen!


I did this a few times when I regularly updated my journal; I think I'd like to start doing it again. It's a nice writing exercise, and it's fun.

We have a lot of fun things planned for outdoors this summer, but of course there will be days we'll be stuck inside. Here are some things for us to do on those dreary days.

First Day of Summer Vacation!

A GOOD day.

Got tickets to see Paul McCartney in Pittsburgh on August 19th. Road trip! Chris's mom, Becca and I are going. Missed out on tickets for the 18th; they sold out in about a minute. They immediately added the 19th, so I got those. Probably nosebleed, but I don't care! This will be my fifth time seeing him. I can't wait.

Made chocolate chip cookies for the first time in a long time. I haven't really been up to baking even though I love it, so I was happy. One even baked into the shape of a heart:


Nice little omen for a good summer, perhaps?

Lauren taught Becca how to make friendship bracelets, and Becca has been creating all day.

I have been craving spaghetti and meatballs since seeing a picture in a local take-out menu, so I made it tonight. It was AWESOME.

I put a scoop of coffee ice cream between two of the cookies, and THAT was even more awesome.

I have a lot of plans for this summer. We are off to a great start!


I am back again, hopefully to stay this time. It's been a rough year - I've had mono, chronic fatigue (still battling), depression, anxiety and some very stressful situations. Not to mention a very serious Facebook addiction. But I've missed writing. I'm not going to post as many recipes, at least not right now.

It's FINALLY summer, and it's time to play. For the next few months, this journal will be about my kids and the fun times we're going to have this summer. Last summer sucked due to my illnesses. I am determined to give them a summer they will never forget. And it will be documented right here.

I took Becca to Ocean City a few days ago; pictures to come soon, maybe tonight. Tomorrow is a trip to Hersheypark with Lauren. And so many more things to come.

But there will be other things, random pictures, recipes, thoughts and so on. I hope people will come back and start reading!

Bonus Recipe!

Tonight I made Herb and Garlic Pasta with Spinach and Bacon. You can find the recipe here. I used penne instead of shells, and didn't bother with the shallot. Plus I couldn't find Rondele, so I used Allouette. It was low-fat, but still fine. This was DELICIOUS!

So no play-by-play post, but here are a couple pictures of my dinner before I scarfed it down:

Chicken Nachos!

I haven't done a dinner post in forever! Then again, when I was down with the mono, I wasn't cooking much at all, let alone documenting it. I've been back to regular cooking the past few weeks, but last night was the first time I felt like taking pictures.

This is an easy meal because once the prep is done, everyone makes their own. We had to have a quick and easy meal last night because Lauren and I had a meeting since she wants to join the indoor pit crew/drumline. I thought our busy season was done once marching band was over, but here we go again!

The ingredients are tortilla chips (I like the "Scoops), shredded chicken, shredded cheese, salsa, beans (optional), chopped jalapeno (optional):
