Four Foods on Friday #55

Man, I am so tired. Next week is Scholastic Book Fair week at the elementary school, and my friend Kim and I spent yesterday and today getting it set up, previewing the books for students, holding a staff preview and lots of odds and ends stuff. I was at the school from 8:45 this morning until 6:00 tonight. It's like going to work, but I don't get paid! But it's fun, even if it's tiring and a lot of work, and the kids at the school get so excited.

The Fall book fair is my big thing during the school year, and once it's done, it's only a few days until Thanksgiving. Which is a long-winded way of getting to the Four Foods on Friday for this week, since it's all about the turkey holiday.

#1. Stuffing. Boxed or from scratch?

From scratch, definitely. My mother-in-law makes a stuffing with fresh sausage that is TO DIE FOR.

#2. If you were served the perfect Thanksgiving dinner what would it be?

I have it served every year! Turkey, stuffing, cranberry sauce, peas, mashed potatoes, rolls - I even like the rutabega! I guess the only thing I would add would be my friend Kelli's amazing sweet potato casserole.

#3. What’s your favorite Thanksgiving leftover?

The day-after sandwich: turkey, stuffing and cranberry sauce on Martin's whole wheat potato bread. I only have it after Thanksgiving and Christmas, so I really look forward to it.

#4. Share a recipe using turkey.

Turkey Black Bean Wraps


Ingredients:

1-1/2 cup thick and chunky salsa
3 cups shredded turkey Breast, thawed if frozen
1 can (15 ounces) black beans, rinsed and drained
1 teaspoon lime juice
¼ to ½ teaspoons ground cumin
8 flour tortillas (8 to 10 inches in diameter), warmed
1-1/2 cups shredded Monterey Jack cheese


Directions:

Mix salsa, turkey, beans, lime juice and cumin in saucepan. Heat to boiling; reduce heat. Simmer 3 to 5 minutes or until heated through.

Spread turkey mixture on tortillas. Top with cheese, roll up.

Those wraps sound really tasty. And healthy!! :) I'm defintely going to have to try those if we have any leftovers.

The turkey wraps sound delicious. I wonder why people only think to have turkey on Thanksgiving?

P.s. I'll post the recipe to the "Pecan Rolls" as soon as I get the recipe from my mother. I don't even know how to make them!

Turkey is just as easy and yummy as chicken, but it does take longer to cook, depending on the weight and cut. Maybe that's why?

I LOVE the book fair. I volunteer at it both times we have it during the year. Our media center director is very picky about how it is setup she does it all by herself, but the moms get to run it. I always buy more and more books everytime I work it. I can spend $20 on Tuesday and then when I work it again Friday I can spend another $20 or $30. But I figure there are worse things I can spend money on, right?

Thanks to your food post now I want Thanksgiving dinner tomorrow. We also bake a regular turkey and deep fry one. My mom makes homemade stuffing and instant. We also have all the norms like potatoes, yams, cranberries, rolls, etc. But we also have cabbage salad with bacon and the dressing on it is vingear, sugar, and a teeny bit of bacon grease for flavor. It is like an artery clogger, but SO good. And my all-time fave is broccoli salad- broccoli, shredded cheese, and, of course, bacon. The dressin on that is mayo, vinegar, and sugar. I could eat that stuff all day.

It's amazing how much money parents and grandparents have spent just the last two days! We've already grossed almost $8000 and we still have three days to go. I drop a bit of money at the book fair also. I get my girls books, plus I always get a book for my daughter's teacher.

I love cabbage, so that sounds like a good recipe, but broccoli in any form does not pass my lips!

I love to cook but don't have that much time with my girls running around but I thought I'd share this you since you have a bunch of recipes and might like to try this.

Every year my Aunt always told us how she made the best, not dry turkey, and I thought she was crazy because my white meat was always dry. Her trick was to cook the turkey breast-side down. I thought that it seemed weird but tried it anyway. I didn't baste it or do anything to it but put it in the roasting pan on a rack upside, covered it with foil, and pulled it out when finished.
She was right. It makes for a really juicy turkey. Try it some time and see if you like it!

That's funny, because I did that by accident one year but didn't realize it. Pulled the turkey out of the oven, went to carve it and there was NO MEAT. Talk about panic! Then my husband realized what had happened. And yes, it was perfect!

I have never tried a turkey sandwich with stuffing in it. You're the second one I've read about liking that combination. I'll have to give it a try. :)

We do - it's called Borders! :-)

Actually, we have a table with books for adults. Mostly cookbooks and schedulers, but I had them deliver some of the Twilight series for those adults who like them or who bring their older kids to browse.
