Four Foods on Friday #47

It's Fair Day in Frederick County, and there is no school. The Great Frederick Fair is a huge event; even local government has the day off. They did away with Fair Day one year and there was so much whining and protesting that they brought it back the very next year. Fair Day is when kids are let in free and the rides are reduced by one ticket. It's a BIG DEAL. Fair Day or not; I'm just glad there's no school!

Here's this week's Four Foods on Friday:


#1. Share a recipe for something Italian.

I don't think this is really Italian, although it does use spaghetti. I don't really make any Italian dishes.

Spaghetti Salad

8 ounces uncooked spaghetti, broken into thirds
6 green onions, cut into 1/4 inch pieces (about 3/4 cup)
4 Italian plum tomatoes, cut in half lengthwise, then sliced
4 ounces of mozzarella cheese, cubed (1 cup) (Sometimes I use four cheesesticks and just slice them up)
1/4 cup olive oil
1/4 cup red wine vinegar (original recipe called for Balsamic vinegar; I don't care for it)
1/2 teaspoon dried basil
1/4 teaspoon salt

Cook spaghetti to desired doneness according to package directions. Drain; rinse with cold water to cool. In medium bowl, combined cooked spaghetti, green onions, tomatoes and cheese. In small bowl, combine remaining ingredients; add to spaghetti mixture and toss to coat. Serve immediately, or cover and refrigerate until serving time.

#2. Jam, jelly, preserves, marmalade, fruit butter or butter. What’s on your toast or bread?

I usually make toast with I Can't Believe it's Not Butter and cinnamon sugar. Once in a while I'll use grape jelly instead of the cinnamon sugar.

#3. What’s your favorite Kellogg’s product? (Since they’re multinational I’m hoping everyone can answer this one. If you don’t have Kellogg’s products, what’s your favorite cold breakfast cereal?)

I really like the new Smart Start Strong Heart Strawberry Oat Bites cereal.

#4. Do you like liver? What about liverwurst?

I always tell my kids that they can't say they don't like something if they haven't tried it. So I can't honestly answer that question. However, I can say that those things will never pass my lips.

Ooh, I think I know what kind of toast I'm going to have for breakfast this morning! I haven't had cinnamon toast in a while.

When I make cinnamon toast, my dog Sandy goes completely insane. She loves it, and will sit there watching me eat and drooling until she gets a piece.

I clicked your link to the Frederick Fair since there is a Frederick just north of here. It is the same one! We're in Germantown. I am so out of touch with fairs and things like that, but now I want to go see Dirks Bently! My husband would never go for that. I better pay better attention next year and maybe I can find a friend to go to a concert with. Now that I think about it, my Body Pump teacher was really excited yesterday because she was going to see Kelly Pickler at the fair. I wasn't really paying attention when she was talking about it, though.

That's so cool you're so close by! I used to live in Germantown almost 20 years ago. I know it's changed drastically out there since then.

If you want to go to a concert at the Frederick Fair, get your tickets EARLY because I think they sell out pretty quickly. They usually have the concert lineup listed sometime in July or August. Personally, I think they need to get some rock bands instead of an all-country lineup!

Something about balsamic (whether vinegar or dressing) just tastes terrible to me. I'm the same way with cilantro, too.

When I was a young girl, we lived in Washington state. We always got the day off from school so that we could go to the state fair. Very cool!

The spaghetti salad sounds good. Do you mean that you eat it cold? I never really tried liver either. Thanks for stopping by mine :)

I serve it right away sometimes, but others (mostly in warm weather), I make it ahead and serve it cold. My daughter loves it in her lunchbox.

If you use the high-fiber pasta (Ronzoni Smart Taste, I think it's called), the points are pretty low for this dish.

I haven't had cinnamon toast in a while. I skipped supper tonight, so maybe I should make some now, hm? I butter the bread, sprinkle with cinnamon & sugar & toast it under the broiler. The sugar carmelizes & makes it's crusty. So good!
