Four Foods on Friday #39

#1. When you need to serve desserts, do you buy them or make them?

I usually bake them. I do have some frozen Market Day dessert items on hand in case I don't have time to make dessert. Their apple pie is fantastic.

#2. When baking do you use butter, margarine or something else?

Butter most of the time. Sometimes I'll use butter-flavored Crisco, depending on the recipe.

#3. What meats or veggies do you cook in the oven?

Meatloaf, roasts, turkey, chicken, potatoes, asparagus, carrots...

#4. Share a recipe for anything that is cooked in an oven.

Pillsbury's So-Easy Lemon Bars

Ingredients:

1 roll (16.5 oz) Pillsbury® Create 'n Bake® refrigerated sugar cookies
4 eggs, slightly beaten
1 1/2 cups granulated sugar
2 tablespoons all-purpose flour
2 tablespoons butter or margarine, softened
2 tablespoons grated lemon peel (2 medium)
1/3 cup fresh lemon juice (2 medium)
1 to 2 tablespoons powdered sugar

Directions:

1. Heat oven to 350°F. In ungreased 13x9-inch pan, break up cookie dough. With floured fingers, press dough evenly in bottom of pan to form crust. Bake 15 to 20 minutes or until light golden brown.

2. In large bowl, beat eggs with wire whisk or fork until well blended. Beat in granulated sugar, flour and butter until well blended. Stir in lemon peel and lemon juice. Pour mixture over warm crust.

3. Bake 20 to 30 minutes longer or until edges are light golden brown. Cool completely, about 30 minutes. Sprinkle with powdered sugar. With knife dipped in hot water, cut into 6 rows by 6 rows.

These are best kept in the refrigerator. Great on a hot summer day.

It's always good to have a dessert on hand in case people show up last minute. I like to have lava cakes on hand. 55 seconds per cake in the microwave and ooey gooey goodness! :)

Regarding the steaks, I sear them for 2 minutes on each side in the skillet. Then I finish them for 10 minutes in a 400 degree oven if you want it to come out medium. 12-13 if you want medium well. They turn out good and juicy! If you use Old Bay and coarse black pepper on each side it makes a delicious crust on the outside during the sear! Mmmm

Thanks! I'd probably only have them in the oven 7-8 minutes since we like our steaks medium rare.

I might have to try to make those lemon bars. The only ones I have ever made come from a box mix from Sam's Club. They are too tart for me!

I like them tart! I actually use more lemon juice and zest than called for, and cut down the sugar a little.

My girls actually eat lemons straight from the fridge. I love tart things, but that's a bit much for me!
